About This Course

From understanding basic flavours and aromas to confidently recommending pairings tableside, this course gives you the tools to enhance every dish and every moment.

In this course, you will learn:

• How guests experience flavour through taste, smell, mouthfeel, and presentation

• The five basic tastes and how they interact with different beverages

• Core pairing techniques, such as complementary and contrasting matches

• How to pair drinks with different food types—from seafood to desserts

• Matching drinks with dietary needs, guest preferences, and cultural considerations

• How to recommend pairings with confidence and upsell naturally during service

Each chapter includes a short quiz, with a final assessment at the end of the course. Successful completion earns a certificate in “Beverage Pairing Principles For F&B Staff.”

Course Curriculum

Chapter 1 - Flavour Basics and Guest Perception
Introduces the five sensory elements of flavour: taste, smell, texture, temperature, and visual appeal, and the five basic tastes: sweet, sour, salty, bitter, and umami. Highlights how guest perception is personal, shaped by culture and mood, and why understanding this helps create tailored recommendations.
Chapter 2 - Core Pairing Techniques
Covers the three main pairing methods: matching similar flavours, contrasting opposites to create balance, and refreshing the palate. Explains how to match the weight of food and drink and use acidity, sweetness, and dryness to balance strong flavours.
Chapter 3 - Beverage Categories and Matching Tips
Provides practical pairing advice for wine, beer, cider, and cocktails, along with non-alcoholic alternatives. Emphasises inclusivity by considering allergies, preferences, and occasions, and shows how thoughtful pairings create memorable moments for all guests.
Chapter 4 - Guest Communication and Confidence
Teaches how to recommend pairings naturally through friendly questions and confident language. Shows how using menu knowledge and staying updated on new items helps upsell effectively and earn guest trust.
Chapter 5 - Conclusion and Key Takeaways
Summarises essential pairing principles: understanding flavour layers, balancing taste and texture, adapting to each guest, and suggesting drinks with confidence. Reinforces that pairing is not about complexity but about care, awareness, and creating connection through great service.
